Who did he marry, names of his children, so we can be sure to find the correct person on the census records.

Hi all
I'm trying to get my family tree done for my Dad (for Christmas), I have stalled at my dad's great grand dad George Spregg, 1911 census says b.1851, 1901 census says b. 1852, also found some Crime, Prisons & Punishment records for him with b. 1856...
I can't find any record of birth for him.
Any ideas how I progress further (there was another 'Spregg' family in Stow on the census's which I'm sure must've been related - my dad often asked questions when he was young but told no relation).
I would love to solve this mystery & appreciate any pointers (& apologies if I have posted incorrectly - I'm very new to this
