Trying to find O'rourke

My Gt.grandfather was Patrick Rourke, born Wexford Town, Ireland. His father was Mark Rourke, mother Mary Hayes. Mark and his sons were cattle dealers/butchers. I have found names for some of Patrick's siblings, Edward,and Thomas, but there are more unaccounted for. I found a Mark Rourke in Liverpool 1901 census, again a butcher. Patrick used to go to Liverpool to buy cattle in the late 1800s so I suppose it follows that some of the family would have stayed there. Their name changes from Rourke to O'Rourke through-out the generations. Any help appreciated. Anne
