I just love her occupation on the marriage cert. Orange Peeler. I have never ever seen that occupation before.

His occupation in 1898 (at marriage) is given as Carman.

In 1911 he's an electric light labourer.

He could have been away between 1900 (when Eliza was born per a tree on Ancestry, and 1903, the year before his next daughter Alice was born in 1904.

Looking for the above in the 1901 census. George born 1880 Bermondsey London
married Alice E Bonny (Bonney) (b 1881)26th Dec 1898. Found him with Alice and 6 children.in 1911 Found Alice with 2 girls living with her mother in 1901 census
Mystery as to where was George in 1901 ? tried for some time.
