In Canada, her surname could be either Wilson, or Scott, or Moffatt (surname of father of last two children in Scotland.)

Unfortunately, the 1921 census is the last Canadian one online.

Welcome to the boards, John.

A tree on Ancestry says she died in Toronto in 1972, but doesn't give any proof.

The tree has a photo of her.

Sarah Wilson b.22May 1886 Dalkeith, Midlothian emigrated to Toronto, Canada in 1923. She was Married to William Scott in 1904 and had Three Children leaving him in 1911. She had two further children, levaing them in foster care in 1922 prior to emigrating in 1923. After that she has proved to exremely elusive to find in Canada. Any help would be appreciated.
