I agree with Greyghost- just because the father's occupation was listed does not automatically mean he was living.

The actual wording on the certificate just requires:
'Father's name and surname' and 'Rank or profession of Father'.

If you're looking at the marriage certificate where Richard Champion is listed as Father and a Tailor - it is possible that the question was asked in such a way that he wasn't described as "deceased" to the official who completed the certificate. This happens more often than you might think.

My Richard Champion was alive at his daughter's, Elizabeth, wedding in Dundrum 1876. He is described as a tailor.

On the marriage for daughter Elizabeth it looks like Golden Lane is her Husband's address. Her address is Dundrum

I doubt they'll be on the census(es) having married in 1845

Until and unless someone finds out when they were born, finding further info may prove difficult
