I myself come from Oldham, my Grandfather was called Emmanuel, my Grandmother was called May ( ne'e Shelmerdine ) she often talked of A Florence and John Etchells , cousins , I believe they also ran a public house at one time.
They may be the same Florence and John Etchells you mention,I was born at 65, Littlemoor Lane as was,and the house was at the bottom of Crow Brew.

Florence etchells nee coop was my cousin she married john dont know if they had children they lived in oldham
