Shepherd changed to Sharpe?

Hi I am looking into my fathers family history and I have got as far as my great grandad Frederick Foulston Sharp/e but am now stuck. It appears that my great great grandma Jane Foulston did not marry a Sharp/e as we thought but she married a George Shepherd in 1862 at Southwell, Notts, and at some point between 1862 and 1871 she (or they) changed their name to Sharp/e because of something that happened in the family,(we think) as they are on the 1871 cencus as John and Jane Sharp/e, with the same named children. They had also moved to another part of the country. Two of the children were born with the surname Shepherd and the rest are Sharpe's. Does anyone know how to go about finding out if they did change their surname or if these are two different men.....I am really stuck.
