Trying to find Williams

I am trying to find details of my great-grandfather, Thomas Williams, who was born in the St.George, Hanover Square, parish in London in about 1826/27, although there is no record of him at that church. He is listed in the 1861 census as an 'army accoutrement maker', living at 55 Crown Street, Westminster, where my grandfather was born. He was not married to my great-grandmother, who appears to have brought up my grandfather on her own, and given him her surname of Goodgame.
