As the others have said, it sounds like there's a male transcription missing.
As for using aliases, I have a few who did that, but they were known as eg Smith alias Jones. This quite often happened when the parents weren't married, but the father was named. The child has the right to use either name.
My grand daughter is in an interesting position, she is (eg) Mary Smith-Jones, Smith being her father's name, Jones my daughter's. When my daughter marries her present partner he wants to adopt my grand daughter, so her name could be Mary Smith-Jones-Brown, and she will be able to use any variant she wants!!

Sometimes the use of aliases ran in families - here's an example from GRO(S):
"Something - George Something lawful son to what-ye-call-him in Mains of Barskimming was baptized April 9th 1704."
(Ochiltree, 1704 OPR 609/1. page 9)

the actual GRO index image is very clear,and no ammendments have been made to the entry,,,,,they just havnt got to the other spouse surname yet,

Not neccecary,,,as the FreeBDM are transcribed by volenteers they may not have reached a spouse surname for one of the women,,so dont write it off just yet,,,,,,,,,,,,,it looks like there could be a male missing........?

Are Mary and Martha definitely the same person, or is there another groom missing?

There are rumours in our family of a Mary Flynn who married a George James, and that Mary Flynn wasn't her real name. This must be the one, surely?
