WHEN were census details recorded?

Does anyone know which month the information was registered for the censuses between and including 1861 and 1901? Knowing this info would help my searches no end. Also, how long after the birth of a child does the parent legally have to register the birth? Knowing this would help me account for the differences between date of birth and date of registration. Thanks. Monique

Fines for non registration started in 1875 ish(july 1st??)
after an act of parliament in 1874
