Ag Labs

I think most people have a glut of ancestors who were ag labs, I know I do. Anyway I want to find out more about these people other than dates for this and that.
What I am wondering is do any records of employment exist from the farms/landowners who employed ag labs. At the very least they must have had records of employees for Pay purposes. Some of them must also have lived in Cottages owned by the farms.
Does anyone know if such farm records exist ?

There has recently been published an addition to the inexpensive series 'My ancestor was a .....', and it is 'My ancestor was an agricultural labourer'. I haven't read it myself but I imagine it will cover all your questions.
