I always enter surnames as maiden names for females, by the fact a couple were married, it is assumed that the female takes the males surname. Otherwise how many Mrs Jones would you have?
On the GR tree, you can enter a "Known as" and put a note in the notes to the effect that "Name changed by deed poll". It is really up to you how you enter them, but again I would put original name.

You should always record the person with the name with which they were registered (or christened, if an older record)

If, during their life, they change their name by deed-poll or some other means, including aka (also known as) this should be recorded as if an "alias" - whether the name change takes place before or after marriage.

When a marriage is recorded, it is assumed that the wife will have take the married name (from a genealogy standpoint, so there is no need to change their natal name.

I have started my tree but one thing i am unsure about..

When you enter their names do you put maiden or married surname... also if they have changed their name i.e. deed poll do you put original name or deed poll name.

Thanks
