Disappearing family on 1891 census Help needed

I am completely stuck with the family i'm tracing as they seem to disappear for 10 years then pop up again in 1901.

I am looking for the Bunch family from Birmingham and Walsall.

In 1881 I find Thomas 30, Sarah 29, Sarah Alice 6, Fanny under 2 yrs and Thomas 3 months all living in Birmingham.
In 1891 I can only find Sarah(mother), now a little older than first thought, in the work house in Walsall an area i know the family moved to. There is no trace of the rest of the family!.
In 1901 Fanny is now head of the household, mom, dad and big sis have disappeared and Thomas and new brother Harry are living with her.
Any ideas why the big gap before reappearing?
All help gratefully received. Pulling my hair out on this one

could be estimated age on census - so this could be death of Thomas (snr)
