Having an Ancestry subscription, I discovered that you can do a basic free search for individuals by occupation on the FindMyPast website (which may help to narrow down hits on other sites).

The following censuses have this facility:

1851 (incomplete)
1861
1881
1891
1901 (incomplete)

I have found this very useful - hope you may too!
