Hi Chris,
For Pharmacists contact - The Royal Pharmaceutical Society Scottish Directorate, 36 York Place, Edinburgh Tel 0131 556 4386
who will be able to advise you. It was possible in 19th century to run a Chemist shop and not be a qualified pharmacist but RPS would be able to let you know if people you are looking for were members of the Society.
For Physicians contact the Royal Society for Physicians and Surgeons ,
Saint Vincent Street Glasgow and speak to their Archivist Carol Parry . She has been most helpful to me in the past and she hopefully can point you in the right direction.

They're also likely to be in any town directory.
