It is Carman.

Sometimes someone who drove horse-drawn trams was called a Carman.

They were often employed by the Railway for the local delivery of goods.

I think Reuben is a Horsekeeper (worked at stables, perhaps)?

I hope the dumplings are nice!

A Carman would be the driver of a horse-drawn delivery vehicle.
