Can someone read an occupation please

Could some kind soul try to read the occupation for a James Pike born 1827 in Chart Sutton, Kent on the 1871 census. The first word looks like Bacon but the only thing I keeping thinking of for the second word is 'Spice'. Not sure if it's related to Posh and Baby lol.

Could it be bacon drier? I'm sure it starts with D, compare it to Dau on previous ones.

The last three letters look like 'ice' to me. What would a bacon drier do? Do you dry bacon?

Looks like drier to me. A bacon dryer would cure bacon.

I have googled Bacon Drier and it seems to be a genuine trade - as Rose says - a curer. I must get my eyes checked lol
