Somewhere on the web there is a relationship calculator which gives you all the info, but in simple terms:

The children of siblings are 1st cousins to each other
Children of 1st cousins are 2nd cousins to each other
Children of 2nd cousins are 3rd cousins to each other
etc, etc
If you have a different number of steps down each branch, then the number difference is the "removed" bit.
