Hello. I'm fairly new to this. Is there a convention on GR to show that the father's name wasn't on the birth certificate as opposed to not having researched the father's name yet?

do you mean when adding to your tree/
I have added the father as a partner to the mum as Unknown then you can add the child and put something in the notes to the fact the child was illigitimate
