Margaret,

Having established that Mary Evans married either Thomas Griffiths or Thomas Jones then the next stage to try to establish which she married is to try and find a Mary Griffiths or Mary Jones married to a Thomas in the census following the date of marriage. Compare the birthplace and birth year of any Mary Griffiths or Mary Jones with those details that you have for Mary Evans when she was unmarried.

In this instance the marriage took place in the March Quarter of 1871 so in theory at least the married couple should be recorded together in the 1871 census which was not taken until 2/4/1871.
