Roy's covered the most useful ones.

There are lots of others, but they tend to be locality-specific.
E.g., there's lots of parish records at http://www.lan-opc.org.uk/indexp.html but only from Lancashire.
Since you don't specify any localities, it's a bit pointless listing any here.

Check out http://www.genuki.org.uk/
There's not much there in the way of records, but a ton of info and links to other sites.

http://www.freecen.org.uk/cgi/search.pl can be useful, but their coverage varies greatly by location.
Check their coverage via the county details at http://www.freecen.org.uk/statistics.html first.
They do have nice household displays you can copy and paste.

It's also worth checking the collections at:
https://www.familysearch.org/search/collection/list#page=1®ion=UNITED_KINGDOM_IRELAND
Some are unindexed (or only partially indexed) images only, so not completely searchable, except by browsing thru them.

You can do free searches at Ancestry.
There are some free data sets - you can search everything, but won't get full details on most without a sub.
The England & wales 1881 census is free there - I think it gives a nicer transcription display than FS, but you have to go thru a multi-step process:


Incidentally, although it's nothing to do with where to find records, I would copy & paste everything you find. My preference is to paste into a Notepad document (Windows start - All programs - Accessories folder - Notepad I use it so often that I right-clicked on it and created a copy I've pasted on my desktop) When you save the file you've been pasting into, give it a sensible name - Smith.txt or Jones.txt or whatever.
