Whole family missing from census

I had much success tracing my grandfather's mother's side back from Catherine May Baster until I came to the 1881 census. Despite their being a record in the 1891 census for my George Baster--a railway clerk born in 1855 in Buckinghamshire/Slough living in Eastleigh, Hampshire with his wife, Eliza, and many children, at least three of whom would have been alive during the previous census--he and his entire family are nowhere to be found in the 1881 census. There are George Basters in the 1871 and 1861 censuses, but I am wary of the lack of evidence to link them with my own.

I would be really grateful if anyone could help at all.

You mention about going back with George - in case you don't have it, here is a birth for a child:

A tree on Ancestry has him marrying Eliza Groom in 1873. Only issue for me is that record shows him as a billiard player!

To be 100% sure of Eliza's name, you might need a child's birth cert:

Thanks for that Jan. I think I've found my George Baster living with his dad, Thomas, mum, Esther, and brother, Levi, in 1861 in Windsor. His birthday is only 1 year out (1856), and he is from Slough (it says Hough, but I believe that's a mistake), Buckinghamshire.

I can't find Thomas in the 1851 census, but I can find Esther Baster. Here's the thing, though, she is from the right place (Egham, Surrey), one year off of the right birthdate (1826) and living in Windsor, but she is not married to a Thomas Baster; she is married to a Levi Baster. This Levi is from Wiltshire as is Thomas, and Levi is the name of Thomas and Esther's son in the 1861 census, but he is born 1826 (Thomas is 1822) and is a post boy not an 'ostler' like Thomas. Additionally, the children in the 1861 census were born in Buckinghamshire after the 1851 census, meaning the family would have gone from Windsor to Buckinghamshire to Windsor again.

Seb, I saw those records. The Slough connection is tempting, but for myself there are too many questions.
Hopefully someone else will crack this, otherwise you might need to purchase a birth cert for one of the children, which with luck will lead you to a marriage for George and Eliza.
Quite tricky aren't they!
I wonder if it might be worth contacting the Ancestry tree owners to see how they came to the marriage to Eliza Groom.
