How do I find an ancestor's employer?

Suggestion If you can get hold of a relevant years census i.e. 1861 or 1871 you maybe able to work out from the address he was living at. He may have been living on a family estate or within someone else's household- you can view households that are next to each other on the census info and see who was living at them.

How can I find out who someone worked for/ My great great grandfather is listed as a gardener on his marriage certificate dated 1857. Is there a way to find out who his employer was?
