Excise Officers in Scotland

My GGGrandfather and his father-in-law were Excise Officers, GGGF John Ramsay in Rothes, Dunbar and Edinburgh in the 1840s and 1850s, and his FiL Colin Chisholm in Kirkintilloch, where his children were baptised in 1816-1824. Does anyone know of any records (www or archives) for the Scottish Excise service - ideally personnel records, but I'd also be interested to know what categories of tax they were expected to collect, etc. John Ramsay is in the 1841 census in Rothes, & that was a couple of years after the start of the Glen Grant distillery there, so he probably had to help collect tax on the whisky. But many other things were also taxable - salt, textiles, windows, etc - I;d like a clearer idea of when these taxes came and went.
