According to http://www.census1891(.)com/occupations-t.htm a tanner is someone who tans or cure dry skin/hides in to leather

A tanner would be someone who tanned leather and a journeyman means that he had served an apprenticeship and was what we would term self-employed. In other words, he didn't work for another employer. I had a Journeyman Plumber.
