How do I find Wills?

If you can give me details of who and if it is in England or Wales I could look in the probate office but if it is Scotland scottishdocuments.com but only 1881 to 1900

Can anyone give me any tips on how I would go about finding wills? or is there somewhere I can go and look up on it? Thanks Lynne-Canvey Island
