please help!! 1851 and 1861 census for wiltshire

My grtgrtgrandad George henry Wilson b.c 1842 in Warminster, Wilts. don't know anything about his family, and on the census that l have found there was only him married. His age also changes with each census!! Family rumour had it that he was of the jewish faith originally. Would this make a difference in the records?!!! Can someone please help? Maureen

Just checked 1851 and there are NO Wilsons in Warminster! Alan
