I have an 1871 and an 1881 census record which tells me my ancester was born in Eastbourne in 1842. I have his marriage certificate of 1870 which tells me the same. However,I can find no record of his birth anywhere. Surely his birth or christening must be registered somewhere !!!

Unfortunately you may not find one. At that early time of registration it was not comulsory, and baptism was never compulsory. Don't give up though until you have visited the Eastbourne archives to look at the parish records in the town and surrounding area. Also have you tried the local register office incase he was missed off the GRO index? You might find him with his family in earlier censuses and get to his parents that way Anne
