It more than likely says Masterman for master baker.

I PM'd my reply to Victoria but for the benefit of discussion

I think it says
masterman

Not sure what one of those is - as previously pointed out he was a master baker in the 1901 census

On the certificate Sidney is a confectioner

I think the squiggle in the middle of masterman is a t; look at the t in confectioner.

Had a look at the cert and it looks like masdimman ! but in the 1901 census it says he is a master baker.
