How to find a business in Lincolnshire circa 1895

Hoping some very smart person here can direct me where to go...I have found more 'notes' of my mothers...information given to her by my grandfather. It seems my gr-grandfather Charles Thompson opened a butcher shop in Grimsby somewhere between 1895 and 1897.

By 1899 the shop was gone and he was in Hampshire living under an alias. 3 of his children's births registered under the alias. As his & his wife's families had been in Lincs for generations, figure had to be drastic for him to leave.

Now, I am thinking his butcher shop went under and he was evading creditors as about 10 years later moved again to Devon and resumed his proper name. (am hoping nothing more sinister). Not sure what statue of limitations on debt was in 1890 England.

Is there anywhere I can search (on-line please as am in Canada) to see if can find any more information?

They do have directories for Lincolnshire - not sure if any for Grimsby
