Brain Patties

2 sets brains (lamb brains are usually used)
breadcrumbs
2 eggs
butter
lemon juice
parsley
seasonings

Soak the brains in salted water for half an hour, then boil lightly and mash. Boil 1 egg hard, chop it finely and add parseley, salt , pepper to taste, with a little lemon juice. Mix well together, melt a litttle butter sufficient to bind the patties and make into small flat cakes. Roll in raw egg and breadcrumbs and fry a light brown.

I would love to post the recipe for Cockaleekie however I really fear that the way the recipe is written would cause this thread to be whooshed. My mum used to go into fits of giggles everytime she read the recipe. And no it's not from my CWA cookbook but from another cookery book published many years ago by Arabella Boxer.

My OH just rolls them in breadcrumbs, fries them and eats them. He once fed them to his children when they were little tackers. Didn't tell them what they were eating until after they'd finished.

They never spoke to him for a couple of days.
