Just read Shaun's comment on sweetbreads and it reminded me of when I used to be a part time waiter in one of Edinburgh's up market hotels, one of the chef's specialties was sauteed sweetbreads served in an oyster and champagne sauce, a couple of old dears whose table I was serving asked what sweetbreads were - I told them exactly what part of the animal the chef fold me they were - I got sacked :-D :-D :-D
