	Grub Up :-D Soya Battered Marinated Mussels with Kinaki Dipping Sauce (nuac cham) You will need approx: 24 mussels. Ingredients 1 cup Olive Oil. 6 egg whites 150gm cornflour 2 dspn soya sauce Fresh Coriander. Method Batter Mix Beat egg whites for 1 minute add cornflour and soya sauce. Remove excess liquid from Marinated Mussels. Place mussels into batter. Heat oil in frying pan, place mussels into pan and cook until golden brown. Turn mussels over and cook until golden brown, 3-4 minutes cooking time. Place on plate and keep warm. Service Serve mussels warm with Kinaki Dipping Sauce (Kinaki Nuac Cham). Garnish with coriander. Kinaki Dipping Sauce (Nuac Cham) Ingredients ½ cup Thai Fish Sauce ½ cup Lime Sauce 1 dspn white sugar 1/3 tspn Kinaki Piripiri Chutney (order online www.maorifood.com) or 1finely chopped chilli 1 finely chopped spring onion 1 finely chopped garlic clove Method Place ingredients in a sealed container and allow flavours to infuse. Usually overnight. Service Serve Kinaki Dipping Sauce (NuacCham) with warm spicy battered mussels. ~~~~~~~~~~~~~~~ Do you like mussels Jem?
