I found a recipe for two muffins (yeah right, who makes two muffins?) :-D

Doubled the recipe, made 4, used silicone cups in a pan & baked them in the halogen oven.

Banana & chocolate chip muffins.

DH tried one............. and said........

They'd be better without the banana, and fruit instead of the choc chips.

Well you know the answer: " make them yourself and good oh, cos I can have the banana and choc chip ones " lol

I had two very ripe bananas in the fruit bowl, enough for 4 muffins.

There's one left........ will I send it to you Liz?

The recipe calls for melted butter... I did my usual "healthy" thing by using 3/4 the amount of good vegetable oil.... because I've run out of macadamia oil :-(

BANANA-CHOC MUFFINS FOR 2

· 1/2 cup self raising flour
· 30 g butter, melted
· 1/4 cup caster sugar
· 1 ripe banana, mashed
· 1/4 cup dark chocolate chips

Preheat oven to 180oC. Line two cups of a muffin pan with squares of baking paper.
Sift flour into bowl. Add remaining ingredients and mix until just combined.
Pour the mixture into prepared muffin cups and half fill the empty muffin cups with water to prevent scorching. Bake for 30 minutes. Leave to cool in the tin for five minutes before turning out onto a wire rack to cool.

Use BIG muffin cups. I mixed it the other way round..... mashed the banana with the oil, then added everything else.

So choc chip and banana muffins would be better without hte choc chip and banana but with fruit instead.

Now I know where old Freds go when they die.

I won't be making them again.

I'll stick with my tried & true pumpkin, apricot, apple & walnut muffins. Yup, all that goes into the mix.

OFITG ~ I think most of the G20 Muffins are on their way home. Cameron is probably sunburned. ;-)

I'm one of those people who isn't fond of icing/frosting...... I scrape it off :-(

I like the cream cheese frosting (just a scrape), but can't stand butter icing and detest marzipan.
