Scozz, it may be a bit warm for a traditional Christmas pudding, but I've got a recipe which we have used for years now, and developed from an original found in a microwave cook-book.

No boiling or steaming etc, and we have substituted the suet with olive oil. The puddings can be frozen

And it is based on traditional ingredients :-D

I also have a microwave pudding recipe, butter instead of suet.

It takes about 10 minutes to cook..... a lot better than hours with a steamy kitchen :-D

In previous years the pud has sat in the fridge for weeks after Christmas, then thrown out :-( ..... I might mix it up and make several small puds and freeze them for winter :-D

If I can find space in the freezer. :-0
