Herb gardens

My herbs are in pots and hanging baskets out on the deck.... most of them are OK.

DH was out this morning helping a friend of ours (she's in her mid 80s)....... she made some tea, and they had their cuppas in her garden.

DH complimented her on the garden, which is beautiful, and said she had a wonderful herb garden....... so he got The Tour.

He said that our Basil plant hadn't been too good this year, so she said she'd give him some.... even though he said we had enough (I use it mainly in salad dressings).

Some?

He came home with bags and bags and bags........ of basil, oregano, rosemary, marjoram, sage....... and some brownish stuff that I don't recognise. The kitchen countertop is covered with bags!

Very generous of her, and I'm not ungrateful....... but I've got loads of my own herbs!!

What am I going to do with it all?

Don't suggest drying it........... it's too humid here right now, it would go mouldy.

Pickling?
Even easier - freeze them in ice cube trays, then put individual cubes in a bag :-D

I might try freezing the rosemary......... friend's rosemary is much bigger than mine...which has very small leaves. Hers smells much stronger too.

I tried freezing basil a while back....... wasn't very successful. It didn't work in salad dressing.

Not bothered about the sage, not one of my favourites, I think it tastes like dust.

Make pesto.
Believe you can freeze it as long as you leave out the cheese. You can add that later.
I'll see if I can find the recipe.
When I made it we ate it right away it was so nice. :-)
