I do it the way Sylvia says. Chuck everything in together and cook on a slow heat for a long time, which ought to tenderise the meat (you don't need to pay for an expensive joint for pot roast, but it's your choice). |

Yes, it will benefit from some herbs and maybe a little wine (or port/madeira/beer!) You can 'reduce' the liquid at the end and add some more seasoning then if required. |

Had that this week GP. I put the brisket in a casserole dish on a bed of carrots and leeks and poured in a mixture of beef stock and red wine. Long, slow cook in a low oven and it was yummy. |

I love brisket...my mum used to get it during the war as her ration as it was more useful.she got it on the bone.took the layer of fat off and rendered that down In the oven,boned and rolled the lean meat pot roasted it and then pressed it in a basin with a flat iron on top. |

Geordie- I think our boiled beef and carrots used a cut called sil verside - not a name I've seen for years but perhaps it has a modern name I don't recognise! |

Elizabeth - I mentioned this post to my pal who is a retired master butcher and he mentioned that Silverside was used as the beef in boiled beef and carrots but the most cheaper and popular cut was Brisket for its flavour. You can buy Silverside in the Grainger market in Newcastle or any family butcher should be able to supply it. |
