I have just had some on toast, bread I had made too, and it was alright.

Of course, I would say that being as I had made it all.

I didn't count them, I went by weight.

The recipe I eventually used after making changes to published ones was based on (mainly the amount of sugar recommended) ...........

1 kg kumquats (ca. 2.2 lbs)
11 (8oz) cups of water
44.5 oz sugar
3½-5 tbsp lemon juice

I cut the kumquats in half, removed the pips, then sliced the fruit thinly, and put them in a large bowl with the water. I tied most of the pips in a piece of muslin and put in the water, then let it stand overnight.

The next day, I added the lemon juice and then brought everything to the boil, then simmered until the fruit was soft when I removed the muslin bag, squeezed out any excess liquid and threw the bag away. I added the sugar and brought back to the boiled to setting.

I let it stand for about 15 minutes before jarring


I cut the sugar by about 8-10% as we don't like things too sweet.

I actually haven't seen kumquats in our stores recently .............. I think people don't know what to do with them :-(

How many kumqats did you use?

I followed a recipe this time and it is very sweet but does have a bitter kick.

Next time I might try without the sweet oranges.

I love kumquat marmalade, although I haven't made it for a number of years.

Still in the pan at the moment, 24 kumqats and two sweet oranges so it will be sweeter than seville marmalade.

You know I made that marmalade recently and was offering it round because I had so much?

Well, we only gave away four jars in the end and I am already having to make some kumqat marmalade because we have eaten it all.

I think the sevilles were particularly good this year because somebody else was saying her marmalade had turned out well too.
