Raspberry ice-cream anyone?

I have single cream - and probably some whisky I keep for when I 'may have a cold coming' :-D :-D :-D

I had a tin in the cupboard because I did make some imitation Bailey's once.

That's easy too.

Open tin, tip into liquidizer.

Fill the tin with single cream, tip into liquidizer.

Fill tin with whiskey, tip into liquidizer. (All of it)

Put in a teaspoon of instant coffee granules.

Give it a whizz and voila, Bailey's!

I've got a small tin of condensed milk in the cupboard - occasionally I yearn for the condensed milk sandwiches of my childhood - but so far I haven't opened it! :-S

That little recipe thing on the Food channel has been irritating me for ages. It shows you how to make a really garish looking sponge cake with a sort of ice-cream middle.

They make the ice-cream by beating a tin of condensed milk with a pint of double cream for quite a long time and adding a bit of vanilla, then freezing it.

Now, Fred's mate is a nice enough bloke buy je will pick his raspberries to excess. We are inundated with them and I have run out of things to do with them. Last night I saw that garish cake advert again and wondered about the ice-cream middle.

Anyway, I did the bit with the double cream, not a pint because I didn't have that much in the fridge but about three quarters of a pint and a tin of condensed milk. I beat it for a fair time with some raspberries I had put through a sieve to get the pips out and froze it.

Another success, I have just had some and, surprisingly, there are no ice crystals in it and it is very rich. It is a bit good!
