Beetroot crisps,

most skinned veg can be crisped,,,,,,,,mix and match.

Mother-in-law's recipe that we used to make a lot but not in recent years ..............

cook beetroot, cool, slice thinly

Make up a raspberry jelly with half water and half vinegar.

Fit beetroot slices into jars (may have to cut some slices in half if too big)

Pour jelly into jars to fully cover.

Put on lid and store in a cool place ................. don't sterilise in water bath or the jelly will melt :-D

Eat with hot or cold meats, cheeses etc.

I love beetroot, but had never thought of it as an additional ingredient in bubble and squeak.

freeze it.....wrap each beet in foil.
freezes well.

Don't talk to me about beetroot. I love pickled beetroot but ours never seems to come out any sense.

I didn't think Fred's mate had grown any this year for that very reason. Well, he had, and he brought in a big bunch of it last weekend.

Not wanting to pickle it and because there was too much for me to eat and they don't seem to want to, I was considering what I could do with said beetroot, cake maybe. In the meantime, OH had boiled the lot, with no plan as to what he would then do with them!

I watched 'Dad's Army' tonight , Walker had a jar of piccalilli and I wanted some so badly.

We don't have any so I have just had the best I can manage, sandwich spread. Mmm, yum,yum,yum.
