Yes, I have got the ready stuff!

Add some milk to the mixture and you have a pancake.

I've always made pancakes from scratch ............. but this year I've had to buy some gluten-free biscuit mix which says it can be used for pancakes.

Having got used to making the pancakes with a soy milk / water mix, we've now got to see what this new version tastes like.

According to the packet, I just use the mix as if it was flour, and add my usual egg, salt, and the soy milk/water.

We also bought a lemon .............. have only fine sugar and squeezed lemon juice on our pancakes. I'll make the mix early in the day as I usually do.

Will report back on the result!!

Well, the pancakes were more than edible, but they were heavier and more like American pancakes in texture. I think I need to do a bit more testing and refinement....... maybe add more liquid???

Certainly, they were nowhere near as bad as I had feared!

OH said he enjoyed them, though they were "heavy".

He had 3 and I had 2 ....... and we still have about half the batter left.

We had planned to make shepherd's pie tonight, he's suggested either have pancakes again or have pancakes as dessert after the pie.


I might just be waddling!!!!!!!
