Dave - I've just learnt something! I just looked up fava beans and apparently they're the same as broad beans, thought they were something more exotic! |

Seared Liver with Fava Beans & Chianti Serves 4 Ingredients 4 x 6 oz portions of sliced calves liver--1cm thick 1 red onion--peeled & finely sliced 1 clove of garlic--chopped Handful of fresh thyme--washed & picked 1 tin of Fava beans--drained 1 1/2 wine glasses chianti 3 oz of butter Sea salt & freshly ground black pepper Olive oil for cooking Method In a hot, large non-stick pan, add a little olive oil, season your pieces of calves liver and begin to fry. Cook for two minutes on each side to give a nice colour on the outside and pink in the middle, remove from the pan and allow to rest. Add your red onions, garlic, thyme and fava beans and cook slightly slower for three minutes. Season to taste, add your chianti, simmer for two more minutes, remove from the heat and stir in your butter. Serve liver with some good mashed potato and some of the sauce. Note.. Well it is great liver and it will make the boss twitch when you tell him you are going home tonight and making Liver with fava beans and some nice Chianti. |
