Lamingtons? Just make a slab sponge, cut it into squares, dip in chocolate icing then in coconut. They're much easier to deal with if you stick the cake in the freezer for a while before cutting (but not frozen solid). Look on google for the Australian Women's Weekly website, they have some great recipes. |

I made the choc-banana, but wondered how it would rise..... the cake in the photograph looked a bit "flat". I added 1/2 teaspoon baking powder.... and I used veg oil instead of melted butter. Not the same amount, about 3/4. |
