LadyScozz Report 27 Jan 2015 21:30

I made the choc-banana, but wondered how it would rise..... the cake in the photograph looked a bit "flat". I added 1/2 teaspoon baking powder.... and I used veg oil instead of melted butter. Not the same amount, about 3/4.

It's a nice cake, very rich..... don't cut the slices too big.

I've been making banana cakes for over 50 years ... first made one in cooking class at school :-D

We've got half of it left, in a tin. I think I'll keep the recipe for winter, it's a bit rich in our hot weather now.

I'm trying something new today (not on the chocolate list)... a beetroot & honey tart. Sounds weird.

:-)

Beetroot & honey tart

350gr grated beetroot
1 cup honey
4 large eggs
125ml coconut oil
1 Tablespoon vanilla essence
75gr cocoa
1/2 teaspoon salt
1 teaspoon almond essence

Simmer the beetroot & honey until beetroot is tender. Puree (with blender or stick mixer) until smooth.

Whisk together the remaining ingredients, then add the beetroot & honey mixture.

Recipe recommends a 23cm springform tin, I used a flan/quiche tin. Line the bottom with paper. Cook at 160C for at least 20 minutes... might need 30 minutes, until the tart is set.

Dust with icing sugar, if you like.

:-)

I like it......... DH says it's weird to make a cake with beetroot :-|

I can't wait to see his face when I make a Red Velvet cake. :-D

Barbra

Barbra Report 28 Jan 2015 22:46

Hello that would be lovely thanks LS .Red velvet cake sounds different :-D I love lemons in cakes & would love the recipe for lamingtons is that what they are called .coconut .& sponge .think i remember them from home & away yrs ago :-) Barbra

LadyScozz

LadyScozz Report 28 Jan 2015 22:53

Lamingtons? Just make a slab sponge, cut it into squares, dip in chocolate icing then in coconut. They're much easier to deal with if you stick the cake in the freezer for a while before cutting (but not frozen solid). Look on google for the Australian Women's Weekly website, they have some great recipes.

:-)

BEETROOT DIP Makes 2 cups

½ cup dry roasted cashew nuts
450gr can beetroot slices, drained
250gr cream cheese at room temperature
2 tablespoons finely grated parmesan
2 tablespoons chopped coriander
½ teaspoon chopped thyme leaves

Process cashews in food processor until finely ground. Add beetroot & process until smooth.

Add cream cheese & parmesan and continue to process until the mixture is quite smooth and well blended.

Fold in chopped coriander & thyme & season to taste with freshly ground black pepper & salt.

You don't have to use coriander & thyme, use whatever you like.

I can't find the recipe for Red Velvet Cake, but here's another one...

RED VELVET "SLICE"

150g (5oz) unsalted butter
150g (5oz) dark chocolate (70% cocoa solids), chopped
150g (5oz) cooked beets
2 eggs
2 teaspoons vanilla extract (optional)
150g (5oz) brown sugar
150g (5oz) almond or hazelnut meal

1. Preheat oven to 180C (350F) and line a loaf pan with baking paper.
2. Melt butter in a small saucepan. Remove from the heat and add chocolate. Stand.
3. Meanwhile, whizz beets in a food processor until smooth. Add eggs, vanilla, sugar and nut meal and whizz again until mixed.
4. Add melted butter and chocolate and again whizz until combined.
5. Spread mixture over the base of your pan and bake for 25-30 minutes or until firm on the top but still "squidgy" in the middle.
6. Cool in the tin and serve sliced with vanilla ice cream or double cream.

Now where did I put that recipe? :-S

LadyScozz Report 28 Jan 2015 23:11

I think I've only made the recipe above, for Red Velvet cake........

I found this one on google, I didn't want to post the full recipe, because it is SO BIG!

http://familyspice.com/recipes/recipe/?recipe_id=215

There are many recipes for Red Velvet cake that use lots of red food colouring, using fresh beetroot is much nicer.

I just noticed that you like lemons :-)

I make this at least once a month, it's really nice.......

Lemon & Lime Tart

http://www.juliegoodwin.com.au/recipe-lemon-tart.html

I use a large flan tin, the filling is the same level as the pastry...... I think it looks weird in the pic, with the pastry sticking up.
